I’m on a quest to find the best chocolate chip cookie ever. Does such a thing even exist? Who knows. That’s why I’ve been baking a lot (really, a lot!!) of cookies lately, and these Thomas Keller chocolate chip cookies are one of my favorite recipes. And while it’s not a recipe that I’ll bake regularly, I do like to have a log of this dough in my freezer in case a cookie-craving hits.

The only tricky thing is that you need to have molasses to make them, which can be quite a challenge to find in France. However, if you do manage to get your hands on it, then this is the recipe to make! If you can’t find molasses, I’d recommend swapping it out for a teaspoon of vanilla extract.

Especially in France, a good chocolate chip cookie is a hard thing to find, so bake up a batch of these and I promise you’ll wow anyone who eats them (whether they’re French or not!).

Why you’ll love these Thomas Keller chocolate chip cookies:

  • I’ve gone ahead and reduced the sugar in the recipe because I found them just a tad too sweet.
  • You can make a double batch at once since the process of making the dough is a bit time-consuming: Keep half of the dough in the fridge, and bake off however many cookies you want at a time. Hello freshly-baked cookies every day! You can roll the other half of the dough into a log, wrap it in plastic wrap, and pop it in the freezer. When you’re ready to bake, simply slice off some cookies and add a minute or two to the baking time.
  • They’re a beautiful, dark brown color, they hold their shape nicely when baking, and have a firm edge with a soft center. Isn’t that the ultimate chocolate chip cookie?
  • Add in a 1/2 teaspoon of cinnamon powder or 1 tbsp of sifted cocoa powder into the batter if you want to make different variations of this recipe. Or, experiment with milk or white chocolate chips.
  • The unbaked chocolate chip cookie dough will keep in the fridge for up to 5 days.

Ingredients

  • 240 g flour
  • 2 g baking soda
  • 3 g salt
  • 110 g dark brown sugar either brown cane sugar or muscovado sugar
  • 9 g molasses
  • 90 g white sugar
  • 105 g dark chocolate chunks
  • 105 g chocolate chips
  • 160 g unsalted butter at room temperature
  • 60 g eggs

Instructions

  • Put the flour, baking soda, and salt in a bowl and whisk to blend.
  • Put the brown sugar, white sugar, and molasses in another bowl and mix to incorporate. The mixture will be lumpy but that's ok.
  • Put the butter in the bowl of the standing mixer (with the paddle/leaf attachment). Cream the butter on medium speed until it's very soft and looks almost like mayonnaise. Scrape down the sides of the bowl.
  • Add the sugar+molasses mixture and mix for another 3-4 minutes until it's very creamy. First the mixture will clump up and then it will start to get fluffy. Scrape down the sides of the bowl.
  • Add the eggs and mix on low speed until they're incorporated, not more than 30 seconds. Scrape down the sides of the bowl. It might look very lumpy and kind of broken, but dont worry, that's normal! Scrape down the sides of the bowl.
  • Add half of the flour mixture, and mix on low speed for 15-30 seconds. Scrape down the sides of the bowl.
  • Add the remaining half of the flour mixture, mix on low speed for 15-30 seconds. Scrape down the sides of the bowl.
  • Finally, add the chocolate chips and chocolate chunks, mix on low for 3-5 seconds, just to blend the chocolate chips.
  • Transfer the batter to a glass or plastic container, and refrigerate overnight.
  • Preheat your oven to 160C. Line two baking trays with a silicone mat or parchment paper. Scoop out balls of cookie batter using an ice-cream scoop or a tablespoon, and gently roll them into a ball (the size of a golf ball) before delicately placing the dough on the sheet.
  • Bake for 12-14 minutes, and feel free to rotate the baking tray mid-way if they're not cooking evenly. Let the cookies cool for a couple of minutes on the sheet before transferring them to a cooling rack.
    Note: depending on your oven, you might need to bake the cookies for an extra 2 minutes. Just keep your eye on them!

Je suis toujours a la recherche de la meilleure recette de cookies aux pépites de chocolat. Après avoir fait plusieurs recettes de cookies (vraiment beaucoup !), j’ai trouvé une super recette que je voulais partager avec vous. Je sais pas si ce sont les meilleurs cookies au monde (est ce que ca existe vraiment ?), mais en tout cas ils sont vraiment très, tres bons. La seule difficulté c’est de trouver de la mélasse, mais si vous en trouvez pas, vous pouvez le remplacer par une càc d’extrait de vanille. J’ai aussi réduit le sucre dans la recette originale car je la trouvais un peu trop sucrée. Puis j’ai essayé de simplifier les étapes car pourquoi se compliquer la vie quand c’est pas nécessaire ?

Comme la recette est un peu chronophage, je vous conseille de la doubler. Vous pouvez congeler une partie (en roulant la pâte en forme de boudin, que vous emballez dans du film alimentaire. Après vous découpez simplement des tranches que vous faites cuire avec 2-3 de minutes de plus de temps de cuisson). L’autre moitié vous pouvez la garder au frais pendant 5 jours. Comme ca vous faite cuire quelques cookies tous les jours, et vous les mangez toute juste sorties du four ! Il y a rien de mieux non ?

La recette des cookies aux pépites de chocolats de Thomas Keller (Bouchon Bakery)

Ingredients

  • 240 g farine
  • 2 g bicarbonate de soude
  • 3 g sel
  • 110 g sucre roux (muscovado ou sucre de canne complet/ non-raffinee, bien marron !)
  • 9 g mélasse
  • 90 g sucre blanc
  • 105 g morceaux de chocolat noir (coupez chaque carré de chocolat en 4 environ)
  • 105 g pépites de chocolat noir
  • 160 g beurre doux à température ambiante
  • 60 g oeufs

Instructions

  • Mettez la farine, la bicarbonate, et le sel dans un bol. Mélangez avec un fouet.
  • Dans un autre bol, mettez le sucre roux, le sucre blanc, et la melasse et melangez. Le mélange va pas très bien s’incorporer mais c’est pas grave !
  • Mettez le beurre dans le bol d’un robot pâtissier avec l’accessoire ‘feuille’. Crémez le beurre sur vitesse moyenne jusqu’à ce qu’elle soit tres cremeuse, avec la consistance d’une mayonnaise. Nettoyez les côtés du bol avec une spatule.
  • Ajouter le mélange sucre/mélasse et mélangez encore à vitesse moyenne pour 3-4 minutes, jusqu’à une consistance très crémeuse. Au début ca va etre plein de petits bouts, apres ca va devenir de plus en plus crémeux. Nettoyez les côtés du bol avec une spatule.
  • Sur vitesse lente, ajouter les oeufs et mélangez très peu, pas plus de 30 secondes, juste pour les incorporer. La mélange va être un peu bizarre, avec un air un peu ‘cassée’, mais c’est pas grave. Nettoyez les côtés du bol avec une spatule.
  • Ajoutez la moitié de la farine, et mixez à vitesse lente pendant 15-30 secondes. Nettoyez les côtés du bol avec une spatule.
  • Terminez avec l’autre moitié de la farine, et mixez à vitesse lente pendant 15-30 secondes. Nettoyez les côtés du bol avec une spatule.
  • Enfin, rajoutez les pépites et les morceaux de chocolat. Mélangez juste pour 3-5 secondes pour bien les incorporer.
  • Mettez la pâte dans une boite hermétique, placez-la au frigo et laisser la se refroidir toute la nuit.
  • Préchauffez votre four à 160C. Mettez du papier cuisson sur 2 plaques de cuisson. Sortez des boules de pate a cookies (en utilisant deux cuillères à soupe ou une cuillère à glace. Roulez-la dans vos mains pour faire une boule, la taille d’une balle de golf environ. Placez la sur la plaque. Répétez.
  • Faites cuire 12-14 minutes, et n’hésitez pas à tourner la plaque en milieu de cuisson. Laissez-les se refroidir 2 minutes avant de les transférer sur une grille pour refroidir. Note: en fonction de votre four, vous allez peut être avoir besoin de les faire cuire 2 minutes de plus. Veillez bien sur la cuisson !
