This one bowl brownie recipe is my go-to brownie recipe and has been for years!

This one bowl brownie recipe is one of those trusty recipes that I know by heart because I’ve probably made it at least a million times. It only takes one bowl and about 20 minutes to bake, and it’s a huge success every time.

But there is one secret: you need to buy the absolute best dark baking chocolate you can find, ideally with a high cocoa percentage. I love to use this Lindt baking chocolate that we can easily find in gourmet supermarkets in France, like Monoprix, or on Amazon.

I just love a one-bowl recipe, don’t you? It means less fuss, less mess, and you’ve got a dessert on the table in less time. And those are exactly the kind of recipes I’m always looking for and hoping to share with you. When you have small kids, a busy job, and a food-oriented brain, then what you need is a quick, satisfying recipe that can be made in the time it takes your kids to do their homework (or just sit there and whine for 15 minutes). 

This recipe was taken from my friend Pascale Weeks’ cookbook: Cookies, Muffins & Co. It’s a recipe that I haven’t really fiddled with at all, because honestly, it’s perfect. Sometimes I cut down on the butter a bit because I find the brownies can end up a bit greasy on the bottom, but honestly, it’s a brownie. Who cares, right?

Brownie making tips:

  1. Use the best quality dark baking chocolate you can find.
  2. If you have time, sift the flour and baking powder. If you don’t have time, don’t bother. 
  3. Make sure you take the brownie off of the baking sheet as soon as it’s cool enough to handle. That’s how you avoid the bottom of the brownies from getting a bit greasy. 
  4. Don’t freak out about the cracks on top of the brownie. That’s actually what you want! A bit of crackling on the top is always a sign of a good brownie.

Ingredients

  • 200 g extra dark, high quality baking chocolate
  • 180 g lightly-salted butter
  • 160 g brown sugar
  • 3 eggs
  • 1 egg yolk
  • 85 g flour
  • 2 pinches salt
  • 1 tsp baking powder

Instructions

  • Preheat the oven to 180 C. Butter a square or rectangular cake pan, or line it with parchment paper.
  • Melt the chocolate and the butter in a bowl in the microwave, stirring occasionally until the mixture is smooth with no remaining lumps.
  • Add the sugar and mix well with a whisk, wooden spoon or spatula.
  • Add the eggs and the egg yolk one by one, mixing well after each addition.
  • Add the flour, baking powder, and salt. Mix well.
  • Pour the batter into the cake pan, smooth out the surface with a spatula.
  • Bake for approximately 20 minutes or until the tip of a knife inserted in the center of the brownie comes out clean.
  • Let cool for 10 minutes before removing the brownie from the cake pan and letting it cool completely on a wire rack.

Je voulais vous partager ma recette chouchou pour des brownies au chocolat.

J’ai du faire cette recette des millions de fois depuis des années, car pour moi c’est la recette parfaite. Il suffit d’avoir un bol et en 20 minutes c’est pret! Cette recette vient du livre de mon amie Pascale Weeks, Cookies, Muffins & Co.

Je vous conseille vivement de prendre un chocolat de qualité. Personnellement j’aime beaucoup celui de Lindt pâtisserie. Il est très corsé et donne un bon goût chocolaté mais pas trop sucrée a ses brownies. 

La recette des brownies:

  • 200 g de chocolat noir
  • 180 g de beurre demi sel
  • 160 g de cassonade
  • 2 pincees de sel
  • 3 oeufs
  • 1 jaune d’oeuf
  • 85 g de farine
  • 1 c.a.c. rase de levure chimique

Préchauffez le four a 180 C. Faites fondre le chocolat et le beurre dans un grand bol au micro ondes, en remuant bien pour avoir une mélange bien lisse. Ajoutez le sucre, melangez. Ensuite, ajoutez les oeufs un par un, plus le jaune, et mélangez après chaqu’un. Finalement, ajoutez la farine, la levure chimique et le sel, et melangez bien. Versez la pâte dans un moule carré d’environ 20cm, lissez la surface, et enfournez pour environ 20 minutes, ou jusqu’à ce que la lame d’un couteau insérée dans le brownie ressort sèche. Laissez tiédir 10 minutes et ensuite démoulez sur une grille.
