Potato leek soup

I call this vegetarian potato soup recipe my ‘clean out your fridge’ recipe. AKA the ‘I’m too lazy to go to the supermarket recipe.’

There’s nothing sexy about this potato soup. No special ingredients. No fancy techniques. It’s literally the most boring soup ever. So why am I sharing it?

Because sometimes we get stuck in a cooking rut and all we have is a whole bunch of potatoes lying around, and a leek that’s seen better days, and we have hungry, cranky kids who want dinner to be on the table 5 minutes ago.

So when that happens, the answer is…vegetarian potato soup!

Side note: I fully encourage you to dress this vegetarian potato soup up with melted cheese, bacon (for the non-vegetarian version), chives, sour cream, and whatever else you would generally pair with a potato. But for once I wanted to share something very simple, so that you also know that I am not always cooking up a storm in the kitchen, using 500 different ingredients and 10 different pots.

Sometimes, it’s just plain old potato soup for dinner. And that’s ok. 🙂

Vegetarian potato soup

A simple yet comforting recipe for vegetarian potato soup that you can dress up with all your favorite toppings!

Ingredients

  • 2 kg potatoes
  • 1 leek sliced thinly
  • 200 ml heavy cream
  • 1 tsbp butter

Instructions

  • Slice the leek. Melt the butter in a large pot on medium heat. Add the leak, cover, and cook until soft and transparent.
  • Meanwhile, peel and chop the potatoes.
  • Add the potatoes to the pot, and the cream.
  • If necessary, add a little bit of water so that the potatoes are almost completely covered. You can also use chicken broth to add more flavor, or vegetable stock if you want to keep this recipe vegetarian.
  • Cook for half an hour with the lid on, or until the potatoes are soft when poked with a fork.
  • Blend with an immersion blender until the soup is smooth. You can finish with a little pat of butter on top before serving. Or, you can load up the potato soup with your favorite toppings like chives, sour cream, or even bacon!
